Breakfast Casserole auf dem Skillet (aka Skillet Breakfast Casserole)

Ingredients:
8 eggs (large)
¼ cup milk
1 cup cooked sausage or bacon (chopped)
1 ½ slices of bread, crust removed and chopped
½ cup shredded cheese (pick a favorite)
Salt and pepper to taste
Two large skillets (non-stick is best)
Optional ingredients:
¼ cup milk
1 cup cooked sausage or bacon (chopped)
1 ½ slices of bread, crust removed and chopped
½ cup shredded cheese (pick a favorite)
Salt and pepper to taste
Two large skillets (non-stick is best)
Optional ingredients:
¼ cup of chopped, sauteed onion (or 1 teaspoon of dried onion flakes) (optional)
¼ cup of chopped, sauteed vegetables of your choice for color (red, green, yellow pepper, mushrooms, etc) (optional)
Directions:
Beat eggs and milk together
Mix in remaining ingredients
Pour whole mixture into a well-oiled skillet (olive oil, bacon grease, etc.)
Cook on low to medium low for 15-20 minutes until the bottom is set (the whole thing will rise)
Place other same-sized or larger skillet over top of first skillet and flip.
Finish cooking in second skillet until firm through
Slice and serve, adding some additional shredded cheese on top
